This simple treat of ice cream sandwiched between two cookies delights young and old!
SERVES: 4
PREP TIME: 15 Minutes
COOK TIME: No Cook Time
Ingredients

2 cups Ice Cream
1 cup Strawberries, chopped
1/2 cup Blueberries
1/2 cup White Chocolate Chips
8 Sugar Cookies
Sprinkles (optional)

Directions
Step 1  Filling:
Slightly soften (just enough to work with) 2 cups of ice cream. While softening ice cream, roughly chop 8-10 strawberry halves and set aside with all of blueberries that come in strawberry-blueberry mixture.
Fold strawberries, blueberries and 1/2 cup white chocolate chips into the ice cream.
 
Step 2  Assembly:
Scoop 1/2 cup of ice cream mixture onto the bottom (flat side) of one cookie. Cover with another sugar cookie (flat side touching the ice cream) and squeeze slightly to even out ice cream filling. Eat immediately or freeze and enjoy later.
 
Step 3  Get Creative:
Let your tastebuds and your imagination run wild --- try different cookies and different fillings. Just using plain ice cream and rolling the ice cream cookies in sprinkles is also fun and festive. This is a great "in the kitchen" activity to do with the whole family.
